Gravity towards the sun is going to be a hard flow where gravity will collide towards the centre of mass. when gravity collides it spins, scales down, and leaves again through channels between the inflow. This outflow can then collide on the way out, and spin again. So you get a sort of cogwheel effect of spins within spins. That is what controls the differential rotation. Pincho Paxton
